Cheese is the whole game
On a typical pie, cheese is 40–50% of the ingredient cost: and mozzarella is a commodity with real price swings. A $0.40 per pound increase on cheese used at 8 oz per pie adds $0.20 to every pizza; across 500 pies a week that's $400 a month in vanished margin. Dough and sauce barely move by comparison. Pizzerias that weigh cheese portions and recheck the math monthly keep their 28%; the ones that don't drift to 34% and wonder why the busy Friday didn't pay.
Worked example: dough $1.10 + sauce $0.45 + cheese $1.80 + toppings $1.20 = $4.55 per pie. At a 28% target food cost, the menu price is $4.55 ÷ 0.28 = $16.25 per pie, leaving $11.70 profit. Cut into 8 slices, that's $0.57 cost per slice and a $2.03 slice price: you'd menu it at $2.25 or $2.50. If cheese jumps 25% to $2.25 per pie, total cost becomes $5.00 and the same $16.25 price is suddenly a 30.8% food cost. That single input is why the calculator has cheese on its own line.

Portion cheese by weight with a scale at the make line: "a handful" is not a recipe. Reprice or reformulate when cheese moves more than 10%; customers accept a $1 menu increase far better than you accept a permanent margin cut. Price specialty pies individually instead of flat topping charges, and remember slices need their own math: boxes, extra handling, and slower turnover justify rounding the slice price up.
